Iam using ircservices.5.0.57 and unrealircd 3.2.4
and my homepageadmin asked me to change the status signs
@ % ! * + into some different
but , where kann i change them?
i wrote all readmes and faqs but i didnt find a possibility
of changing

There is no config item. To change these symbols you would have to edit the source code of unrealircd. Now let me explain why thats a bad idea:
Not only will you have to edit unreal (and lose all your support forever), you will also have to edit every client (read: mIRC, xchat, irssi, bitchx, fifty thousand more), and distribute those edited clients to everyone who wants to connect to your server. This is because these clients follow the IRC protocol which says that @ and + are the symbols for +o and +v, and you dont get a choice. That is not to say its easier or at all ok to modify the ~ & and % symbols.
